Preheat your oven to 350°F (175°C).
Season the beef short ribs with salt, black pepper, garlic powder, and onion powder.
Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, sear the ribs for about 3-4 minutes per side, until they’re nicely browned.
After searing, brush the ribs generously with BBQ sauce and place the skillet in the oven.
Bake the ribs for about 2.5-3 hours, or until the meat is tender and the sauce is caramelized and sticky. Every 30 minutes, brush the ribs with more BBQ sauce for extra flavor.
2. Make the Mac & Cheese:
Cook the elbow macaroni according to the package instructions, then drain and set aside.
In a saucepan, melt butter over medium heat. Stir in the flour and cook for about 1 minute, creating a roux.
Gradually add the milk and heavy cream, whisking constantly until smooth. Bring to a gentle simmer and cook for about 2-3 minutes until thickened.
Stir in shredded cheddar cheese, salt, black pepper, garlic powder, and onion powder until the cheese is fully melted and the sauce is creamy.
Add the cooked macaroni to the sauce and mix well until everything is combined.
3. Prepare the Sides:
If making fries, bake or fry according to your preferred method. You can also roast vegetables or prepare a fresh coleslaw for a refreshing contrast.
4. Serve:
Plate the BBQ short ribs with a generous serving of mac and cheese on the side.
Add your favorite sides, like fries or roasted vegetables, to complete the meal.
Garnish the ribs with fresh herbs or a drizzle of extra BBQ sauce, if desired.
