Preheat your oven to 400°F (200°C).
Pat the chicken drumsticks dry with a paper towel, then rub them with olive oil, garlic powder, smoked paprika, salt, and black pepper.
Place the drumsticks on a baking sheet lined with parchment paper or foil.
Bake the drumsticks for 30-35 minutes, or until they are cooked through and the skin is crispy. During the last 5 minutes of cooking, brush each drumstick generously with barbecue sauce and return to the oven to caramelize the sauce.
Make the Fries:
While the chicken is baking, peel and cut the potatoes into thin fries.
Toss the fries in a bowl with olive oil, paprika, garlic powder, and salt until evenly coated.
Spread the fries in a single layer on a separate baking sheet.
Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.
Prepare the Buns:
Toast the buns in the oven for 2-3 minutes or until slightly crispy and warm, or you can toast them on a skillet with a little butter for extra flavor.
Assemble and Serve:
Place the hot BBQ chicken drumsticks on a platter, garnish with fresh parsley or cilantro if desired.
Serve with crispy fries and warm buns on the side. You can even drizzle a little extra barbecue sauce over the fries or serve it on the side for dipping.
