Banana-Strawberry Cheesecake Fantasy – A Creamy Dream of Sweetness and Fruit!

Prepare the Crust: Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan. In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press this mixture into the bottom of the prepared pan to form a crust.
Banana Mixture: In another bowl, combine the mashed bananas and lemon juice. Set aside.
Make the Filling: In a large mixing bowl, beat the cream cheese and granulated sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition.
Add the Rest: Mix in the sour cream, vanilla extract, and flour until smooth and well combined.
Combine Banana & Strawberries: Gently fold in the mashed banana mixture and chopped strawberries, making sure they are evenly distributed throughout the batter.
Bake: Pour the batter into the prepared crust and smooth the top with a spatula. Bake for 60-70 minutes or until the center is almost set.
Cool the Cheesecake: Turn off the oven and let the cheesecake cool in the oven with the door closed for 1 hour. Then, remove it from the oven and allow it to cool completely on a wire rack.
Chill and Serve: Refrigerate the cheesecake for at least 4 hours, or overnight, before serving.
