Grease and line a baking dish with parchment paper.
2. Make the Crust
In a bowl, mix graham cracker crumbs with melted butter.
Press the mixture evenly into the bottom of the prepared baking dish.
Bake for 8-10 minutes, then set aside to cool.
3. Prepare the Cheesecake Filling
In a large mixing bowl, beat softened cream cheese and granulated sugar until smooth.
Add eggs, one at a time, beating well after each addition.
Stir in vanilla extract, sour cream, and heavy cream until fully combined.
4. Assemble the Bars
Pour half of the cheesecake batter over the cooled crust.
Arrange sliced bananas evenly over the batter.
Pour the remaining batter on top and spread evenly.
Sprinkle crushed vanilla wafer cookies over the top.
5. Bake
Bake for 45-50 minutes, or until the center is set and a toothpick inserted comes out clean.
Let cool completely, then refrigerate for at least 4 hours or overnight for best results.
6. Serve & Enjoy
Cut into bars and top with extra crushed vanilla wafer cookies before serving.
