Preheat your oven to 375°F (190°C).
Slice the zucchini and drizzle with olive oil. Season with salt, black pepper, dried garlic, and oregano.
In a frying pan, sauté the chopped onion, bell peppers, and grated carrot with a bit of olive oil until softened.
Assemble the Dish:
In a baking dish, layer the zucchini slices.
Add the sautéed vegetables on top, followed by the chopped tomato.
Add Rice (Optional):
If using rice, mix in cooked rice with the sautéed vegetables and spread the mixture evenly in the baking dish.
