Preheat the oven to 400°F (200°C).
Place the cutlets between two sheets of plastic wrap or parchment paper and gently pound them with a meat mallet to about 1/2-inch thickness. This ensures even cooking and tenderness.
Season both sides of the meat with a pinch of salt and pepper.
Step 2: Set Up the Breading Station
In three shallow dishes, set up your breading station:
In the first dish, place the flour.
In the second dish, beat the eggs.
In the third dish, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, paprika, and a pinch of salt and pepper.
Step 3: Bread the Schnitzels
Dredge each cutlet in the flour, making sure to coat both sides.
Dip the floured cutlet into the beaten eggs, allowing any excess to drip off.
Press the cutlet into the breadcrumb mixture, ensuring an even coating on both sides. Repeat for all the cutlets.
Step 4: Bake the Schnitzels
Lightly grease a baking sheet with olive oil or melted butter. Arrange the breaded cutlets in a single layer on the baking sheet.
Drizzle or brush the top of the schnitzels with a bit more olive oil or butter to help them crisp up in the oven.
Bake for 20-25 minutes, flipping halfway through, until the schnitzels are golden brown and crispy on both sides.
Step 5: Serve
Once baked, remove the schnitzels from the oven and let them rest for a few minutes.
Serve with fresh lemon wedges for squeezing over the schnitzels, and enjoy!
