Baked Garlic Parmesan Chicken Mini Meatloaves: A Flavorful Twist on a Classic Favorite

Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or a muffin tin with olive oil to prevent the mini meatloaves from sticking.
Prepare the Meatloaf Mixture:

In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, milk, egg, chopped parsley, salt, pepper, oregano, and garlic powder. Use your hands or a spoon to mix everything together until well incorporated. The mixture should be moist but firm enough to hold its shape.
Shape the Meatloaves:

Divide the meat mixture into 6-8 equal portions and shape them into small individual meatloaves. Place them on the prepared baking sheet or in the muffin tin.
Bake the Meatloaves:

Bake in the preheated oven for 25-30 minutes, or until the mini meatloaves are cooked through and reach an internal temperature of 165°F (74°C). If using mozzarella cheese, sprinkle it on top of each meatloaf during the last 5 minutes of baking to melt and create a delicious cheesy crust.
Serve:

Allow the mini meatloaves to rest for 5 minutes before serving. Serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh green salad.
