In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, milk, egg, chopped parsley, salt, pepper, oregano, and garlic powder. Shape the Meatloaves:
Divide the meat mixture into 6-8 equal portions and shape them into small individual meatloaves. Place them on the prepared baking sheet or in the muffin tin.
Bake the Meatloaves:
Bake in the preheated oven for 25-30 minutes, or until the mini meatloaves are cooked through and reach an internal temperature of 165°F (74°C). If using mozzarella cheese, sprinkle it on top of each meatloaf during the last 5 minutes of baking to melt and create a delicious cheesy crust.
