Baked Fish with Cherry Tomatoes and Olives – A Flavorful and Easy Seafood Dish

Preheat your oven to 375°F (190°C) to prepare for baking.
2. Prepare the Fish:
Place your fish fillet on a baking sheet lined with parchment paper or lightly greased with oil.
Sprinkle the fish seasoning, Cajun seasoning, Italian seasoning, paprika, salt, and black pepper evenly over the fillet.
3. Add Vegetables and Herbs:
Arrange the cherry tomatoes and olives around the fish fillet on the baking sheet.
Sprinkle the minced garlic and chili flakes over the vegetables.
Place the fresh parsley and thyme sprigs over the fish and veggies to add a burst of flavor.
4. Drizzle with Oil and Butter:
Drizzle the cooking oil over the fish and vegetables, ensuring everything is well coated.
Cut the salted butter into small pieces and scatter it over the fish and veggies for added richness.
Add 2 tablespoons of water around the ingredients to help steam and keep everything moist as it bakes.
5. Bake the Fish:
Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the fish is fully cooked (flakes easily with a fork) and the vegetables are tender.
If you are using a thicker fish like salmon, it may take a few extra minutes.
6. Serve:
Once baked, remove the dish from the oven. Serve the fish with the roasted cherry tomatoes, olives, and aromatic herbs.
Garnish with any remaining fresh parsley before serving.
