Baked Blueberry Fritter Bites: A Healthy Twist on a Classic Treat

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent the fritter bites from sticking.
Prepare the Dry Ingredients:

In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using). Set aside.
Mix the Wet Ingredients:

In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter until smooth.
Combine the Wet and Dry Ingredients:

Pour the wet ingredients into the dry ingredients and gently stir until combined. The batter should be thick but slightly sticky.
Add the Blueberries:

Gently fold in the blueberries and lemon zest (if using), being careful not to break up the berries.
Form the Fritter Bites:

Using a spoon or cookie scoop, drop heaping spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
Bake:

Bake in the preheated oven for 12-15 minutes, or until the fritter bites are golden brown and a toothpick inserted into the center comes out clean.
Serve:

Allow the fritter bites to cool slightly before serving. Dust with powdered sugar or drizzle with honey or maple syrup for added sweetness.
