Bacon-Wrapped Cheese-Stuffed Meatballs

In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, parsley, salt, pepper, and smoked paprika. Mix everything until well combined.
If the mixture feels too sticky, you can add a little more breadcrumbs to make it easier to form meatballs.
2. Stuff the Meatballs:
Take a small amount of the meat mixture and flatten it in your palm. Place a cube of mozzarella in the center, then wrap the meat around the cheese to form a ball.
Repeat with the remaining mixture and mozzarella cubes.
3. Wrap the Meatballs with Bacon:
Take a slice of bacon and wrap it around each meatball, securing it with a toothpick if needed.
Repeat for all the meatballs.
4. Bake the Meatballs:
Preheat your oven to 375°F (190°C).
Place the bacon-wrapped meatballs on a baking sheet lined with parchment paper or a silicone baking mat.
Bake for 25-30 minutes, or until the bacon is crispy and the meatballs are cooked through (internal temperature should reach 165°F/74°C).
5. Make the Dipping Sauce:
While the meatballs are baking, combine mayonnaise, ketchup, Dijon mustard, smoked paprika, salt, and pepper in a small bowl. Stir until smooth.
Adjust the seasoning to your liking.
6. Serve:
Once the meatballs are done, remove the toothpicks if used, and serve hot with the dipping sauce on the side.
