Lay the bacon slices over the top of the meatloaf, slightly overlapping each slice. Sprinkle the shredded cheddar cheese over the top of the bacon.
Make the Glaze:
In a small bowl, mix together ketchup, brown sugar, and mustard to make the glaze. Spread this glaze evenly over the top of the meatloaf.
Bake the Meatloaf:
Bake the meatloaf for 1 hour, or until the bacon is crispy and the internal temperature of the meatloaf reaches 160°F (71°C).
Rest and Serve:
Allow the meatloaf to rest for about 10 minutes before slicing and serving.
