Bacon Cheeseburger Meatloaf: Savory, Cheesy, and Bacon-Infused Comfort Food

Cook the bacon in a skillet until crispy. Remove and drain on paper towels, then crumble it into small pieces.
In the same skillet, sauté the onion and garlic over medium heat for 2-3 minutes, until softened and fragrant. Set aside to cool slightly.
Mix the Meatloaf:
In a large bowl, combine the ground beef, ground pork, crumbled bacon, shredded cheddar, breadcrumbs, milk, sautéed onion and garlic, Worcestershire sauce, Dijon mustard, egg, salt, pepper, and smoked paprika. Mix gently until just combined.
Shape the Meatloaf:
Transfer the meat mixture to a lined or greased loaf pan, shaping it into a loaf shape. Alternatively, you can shape it on a baking sheet if you prefer a more rustic look.
Prepare the Glaze:
In a small bowl, mix together the ketchup and mustard. Spread this glaze evenly over the top of the meatloaf.
Bake the Meatloaf:
Preheat your oven to 375°F (190°C). Bake the meatloaf for 50-60 minutes, or until it reaches an internal temperature of 160°F (71°C) and the glaze is bubbly and caramelized.
Serve:
Let the meatloaf rest for 10 minutes before slicing. Garnish with extra shredded cheese on top if desired, and serve hot.
