½ cup (107g) vegetable oil (Canola oil)

4 large eggs

½ tsp ground nutmeg

1/2 tsp salt

2 tsp vanilla extract

2 cups (about 2 medium) apples, peeled, cored, and grated

1 cup (150g) chopped toffee bits or caramel chips

For the Caramel Topping:
1 cup (200g) brown sugar

1/2 cup (1 stick) unsalted butter

1/4 cup heavy cream

1 tsp vanilla extract

1/4 tsp salt
