Preheat the oven to 400°F (200°C).
Brush both sides of the flour tortillas with melted butter and sprinkle with cinnamon sugar.
Place the tortillas on a baking sheet and bake for about 8–10 minutes, or until golden and crispy. Remove from the oven and let them cool.
Make the Cheesecake Filling:
In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
Gently fold in the whipped cream until well combined.
Make the Apple Topping:
In a skillet, melt the butter over medium heat. Add the diced apples and sauté for about 3–5 minutes until they begin to soften.
Stir in the brown sugar, cinnamon, and a pinch of nutmeg (if using). Continue cooking for another 5–7 minutes until the apples are tender and the mixture thickens slightly.
Assemble the Tacos:
Once the taco shells have cooled, fill each with a generous spoonful of the cheesecake mixture.
Top with the sautéed apple filling.
Optional Toppings:
For extra sweetness, drizzle with caramel sauce or add a dollop of whipped cream on top.
