Stir in the brown sugar, cinnamon, and a pinch of nutmeg (if using). Continue cooking for another 5–7 minutes until the apples are tender and the mixture thickens slightly.
Assemble the Tacos:
Once the taco shells have cooled, fill each with a generous spoonful of the cheesecake mixture.
Top with the sautéed apple filling.

For extra sweetness, drizzle with caramel sauce or add a dollop of whipped cream on top.
