Apple Butter Cookies

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
Make the Cookie Dough:

In a large mixing bowl, cream together the softened butter and apple butter until smooth and fluffy.
Gradually add sugar, and beat until well combined.
Combine the Dry Ingredients:

In a separate bowl, whisk together the flour, cinnamon, baking soda, and salt.
Slowly add the dry ingredients to the butter mixture, mixing until the dough comes together.
Shape the Cookies:

Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, leaving about 2 inches between each cookie.
Bake the Cookies:

Bake the cookies for 10-12 minutes, or until they are lightly golden around the edges.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
