Make the meatballs: In a bowl, combine the ground beef, breadcrumbs, onion, egg, salt, and pepper. Mix until just combined. Shape into golf ball-sized meatballs and place them in the prepared baking dish.
Prepare the gravy: In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute until lightly golden. Gradually add the beef broth, whisking constantly to avoid lumps. Add garlic powder, onion powder, thyme (if using), and season with salt and pepper. Let the gravy simmer until slightly thickened.
Pour gravy over the meatballs in the baking dish, ensuring they’re mostly covered.
Bake uncovered for 35–40 minutes, or until the meatballs are fully cooked and the gravy is bubbling.
Serve hot, garnished with fresh parsley if desired.
