In a large bowl, combine the minced pork with salt, pepper mixture, dry garlic powder, and Italian herb mix.
Add the grated onion to the mixture, making sure to strain any excess juice to prevent the meatloaf from becoming too wet. Mix all the ingredients together until well incorporated. Be sure not to overwork the meat to keep it tender.
Shape the Meatloaf:
Preheat your oven to 350°F (175°C).
Take the meat mixture and shape it into a loaf on a baking sheet or in a loaf pan, depending on your preference.
Bake the Meatloaf:
Bake in the preheated oven for 45-60 minutes or until the meatloaf is fully cooked through and reaches an internal temperature of 160°F (70°C). You may want to check the meatloaf with a meat thermometer to ensure it’s perfectly cooked.
Prepare the Sauce (optional):
While the meatloaf is baking, mix together soy sauce, honey, sesame oil, and rice vinegar in a small bowl.
Heat the sauce in a small saucepan over low heat for about 5 minutes, stirring occasionally, until it thickens slightly.
Serve:
Once the meatloaf is done baking, remove it from the oven and let it rest for 10 minutes.
Slice the meatloaf and drizzle the prepared sauce over each slice for a sweet and savory finish.
