Classic King Fish Roasted in Butter with Provençale Sauce

Introduction
This King Fish recipe is a show-stopping centerpiece for any seafood lover’s table. The fish is roasted to perfection with a flavorful herb-butter coating and served with a bold, Mediterranean-inspired Provençale sauce packed with garlic, tomatoes, capers, and olives. It’s vibrant, savory, and satisfying—a perfect fusion of rustic and refined.

Ingredients
For the Fish:
1.5 lbs King Fish fillet

4 tbsp butter, room temperature

1 tsp paprika

1 tbsp chopped parsley

1 tsp lemon or lime juice

1 tsp lemon or lime zest

Salt and black pepper, to taste

For the Provençale Sauce:
2 tbsp olive oil

1 tbsp butter

3 garlic cloves, minced

¼ tsp chili flakes

½ tsp fresh thyme (or ¼ tsp dried thyme)

Zest of 1 lemon or lime

4–6 Roma tomatoes, chopped and seeded

1 tsp anchovy paste

2 tbsp capers, rinsed and drained

¼ cup chopped Kalamata olives

1 tbsp red wine vinegar

2 tbsp chopped fresh parsley

Salt and black pepper, to taste
