Ropa Vieja (Cuban-Style Beef Stuffed)

A delicious Cuban dish featuring tender, shredded beef in a savory tomato and spice sauce.

Ingredients:
1 cup olive oil

1.4 kg (3 lbs) beef (flank, shoulder, or chest)

1 onion, chopped

1 green pepper, minced

1 red pepper, minced

1 yellow pepper, minced

4 cloves garlic, minced

2 cups tomato concentrate

2 tbsp ground cumin

3 tbsp sweet paprika

1/8 tsp ground Jamaican pepper

1/8 tsp ground cloves

500 ml (2 cups) beef broth

1 box (410 g) crushed tomatoes

2 tsp dried oregano

2 bay leaves

1 cup green olives (optional, sliced)

2 tbsp capers

1 cup cider vinegar or lime juice

Salt and pepper to taste

2 tbsp fresh coriander (cilantro), chopped
