Introduction

Ingredients
1 cup rolled oats

1 cup grated carrots (about 2 medium)

1/2 cup medjool dates (pitted and soaked if dry)

1/2 cup chopped walnuts or pecans

1/4 cup unsweetened shredded coconut

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ginger (optional)

1 tsp vanilla extract

Pinch of salt

1–2 tbsp nut butter (almond or cashew work well)

1–2 tsp maple syrup or honey (optional, for extra sweetness)
