This hearty Brussels Sprout Stew with Meatballs is a perfect balance of savory, tender meatballs and crispy Brussels sprouts, simmered in a flavorful broth. Ingredients:
For the Meatballs:
1 lb ground beef or pork (or a mix of both)

1/2 cup breadcrumbs

1 egg

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp dried thyme

1 tsp salt

1/2 tsp black pepper

1 tbsp olive oil (for frying)

For the Stew:
1 lb Brussels sprouts, trimmed and halved

1 medium onion, chopped

2 cloves garlic, minced

2 carrots, sliced

2 medium potatoes, peeled and diced

6 cups low-sodium chicken or vegetable broth

2 tbsp olive oil

1 tsp dried rosemary

Salt and pepper to taste

1 tbsp fresh parsley (optional, for garnish)
