“Tear Cake” – An Unforgettable Recipe for Any Occasion

Introduction
“Tränenkuchen,” or “Tear Cake,” is a beloved German dessert known for its fluffy texture, creamy topping, and signature meringue “tears” that form as it cools. With a sweet and slightly tangy cream cheese layer and a soft crust, this cake is a showstopper perfect for birthdays, holidays, or any day you want to impress.

Ingredients
For the shortcrust base:

200 g (1 2/3 cups) all-purpose flour

1 tsp baking powder

75 g (1/3 cup) sugar

1 egg

100 g (7 tbsp) butter (cold and cubed)

For the cream cheese filling:

500 g (2 cups) quark or cream cheese

100 ml (about 1/2 cup) milk

100 ml (about 1/2 cup) vegetable oil

125 g (1/2 cup) sugar

2 eggs

1 packet vanilla pudding powder (or 1 tbsp cornstarch + 1 tsp vanilla extract)

Zest of 1 lemon (optional)

For the meringue topping:

3 egg whites

100 g (1/2 cup) sugar

1 tsp lemon juice
