½ cup (100g) granulated sweetener (or monk fruit sweetener)

1 cup (240ml) vegetable oil

4 large eggs

2 tsp vanilla extract

2 ½ cups (250g) grated carrots

½ cup (60g) chopped walnuts or pecans (optional)

½ cup (80g) raisins (optional)

For the Frosting:

8 oz (225g) cream cheese, softened

½ cup (115g) unsalted butter, softened

1 ½ cups (180g) powdered sweetener (or powdered erythritol)

1 tsp vanilla extract

1-2 tbsp milk (as needed for consistency)
