Beef Rendang

A rich and flavorful dish from Indonesia, Beef Rendang is a slow-cooked curry made with tender beef simmered in aromatic spices and coconut milk. This dish is perfect for special occasions or a comforting meal.

Ingredients:
1 kg beef (preferably chuck or brisket, cut into cubes)

1000 ml thick coconut milk (or the milk from 3 coconuts)

2 tbsp finely ground chili (adjust to taste)

1 turmeric leaf (if available)

4 lime leaves (or substitute with kaffir lime leaves)

2 bay leaves

2-3 cloves garlic, minced

2 medium-sized onions, chopped

2-inch piece of ginger, minced

2-inch piece of fresh turmeric, minced (or 1 tsp ground turmeric)

1 cinnamon stick

2 star anise

1 tbsp sugar (palm sugar is ideal)

Salt to taste

2 tbsp vegetable oil
