10-Minute Vegetable and Potato Casserole: A Delicious Dinner That’s Too Good to Keep Secret!

Preheat your oven to 400°F (200°C). While the oven is heating up, prepare the vegetables and potatoes by slicing them thinly for quicker cooking.

Assemble the Casserole:
In a greased casserole dish, layer the sliced potatoes at the bottom. Add a layer of mixed vegetables on top of the potatoes. Continue layering until you’ve used up all the ingredients.

Add the Cream and Seasoning:
Pour the heavy cream (or milk) evenly over the layered vegetables and potatoes. Sprinkle garlic powder, salt, and pepper to taste. Drizzle the olive oil over the top for added flavor.

Top with Cheese:
Sprinkle the shredded cheese evenly over the casserole.

Bake:
Cover the casserole with foil and bake for 20-25 minutes, or until the potatoes are tender. Remove the foil for the last 5 minutes to allow the cheese to get golden and bubbly.

Serve:
Once the casserole is done, remove it from the oven and let it cool slightly before serving. Garnish with fresh herbs if desired.
